French tarragon is grown either as an annual or a deciduous perennial depending on climate. This herb has long stems and slender, fresh green, aromatic leaves which have a sweet anise flavour. It can sometimes produce tiny pale green-yellow flowers which are sterile.
It can be used fresh or dry. It is best known for its use in traditional bearnaise sauce. It is also excellent with fish, shellfish, and chicken or egg dishes. It can be used to flavour vinegars or infuse oils.
Position in a sheltered spot in full sun and in well-drained soil. Prefers a sandy soil. Does not tolerate cold or wet soil.
