Origanum Vulgare aureum is a small perennial shrub with small golden yellow oval leaves and small white or pink flowers. This versatile herb adds a deep flavour to Mediterranean and Mexican cuisine. Use oregano to flavour pizza and pasta sauces and tomato based soups. It is good with mushrooms, vegetable dishes, omelettes/frittata, and meat and fish dishes. It can also be used to infuse olive oil. To get the best flavour, add fresh oregano toward the end of cooking and add dried oregano at the start. Start harvesting the leaves when the plant is about 15cm in height. Pinch out the flowers to maintain a bushy plant.
