Green Fennel is an attractive and popular perennial herb. The plants grow into a lovely clump of feathery foliage. Large heads of tiny flowers are produced in late summer. Both the leaves and the seeds can be used. Fennel has a sweet aroma and an aniseed flavour. The fresh leaves can be used in soups, sauces, fish stocks, and mayonnaise. Green Fennel can also be also used with oily fish such as salmon in order to improve digestion, or it can be made into Fennel Tea.
This is not Sweet or Florence Fennel which is an annual vegetable grown for its swollen bulbs.
Plant in moist well-drained soil with plenty of humus and in full sun. It will tolerate some light shade for a few hours during the day.
Fennel can produce leaves up to 40 cm long.
