Better known as Sage, this herb is used for culinary and medicinal purposes. It is an evergreen shrub and has aromatic grey-green leaves, that are very soft with fine hair-like filaments. It produces blue flowers during the summer. Sage can be used fresh or dried. The fresh leaves have a more delicate flavour and can be used in stuffings, sausages and in poultry and fish dishes. It also adds great flavours to vegetable and bean dishes. Sage pairs well with rosemary and thyme.
Position in full sun and in well-drained soil.
