Taxus Baccata or common yew is a perfect choice for a neat trimmed hedge. This slow-growing, coniferous, evergreen shrub is native from the UK so perfectly suited for the Irish weather and ideal for wildlife. (Note however that it is toxic to dogs). Undemanding, it will grow in any light or soil condition as long as it is well-drained.
